Kick start your day with a healthy colorful breakfast that’s sure to put you in a good mood! I came up with this omelet idea when I was on a health kick and needed to make veggies more appealing. It’s quick and easy, and a sure-fire way to get your kids to eat their veggies without a fuss.. here’s the recipe:
- 2 organic eggs
- Green bell pepper, diced
- Red bell pepper, diced
- Yellow bell pepper, diced
- Orange bell pepper, diced
- 1 Spring onion, chopped
- 1/4 cup cheddar cheese
- 1/2 tsp tumeric
- 1/4 tsp salt
- 1/4 tsp blackĀ pepper
- 1 tbsp olive oil
- Salsa (optional)
Eggs are full of nutrients and omega-3 which is good for your brain.
I always try to eat the rainbow in every main meal. Bell peppers are loaded with vitamins and minerals. They give a nice crunchy texture to your omelet!
Cheese provides calcium which helps strengthen your bones.
Olive oil is the best oil to use in your food because it’s unsaturated and heart healthy.. it’s also great for your skin! Tumeric is an anti-inflammatory so it is also good for your skin as well as an overall immunity booster.
Always make meals fun and get your kids involved in the process! They need to learn these basic life skills.
