Weekend Breakfast: Pancakes For Two!

It’s the weekend!! Which means pancakes! Almost all the pancake recipes out there are measured out for an army! You always end up with way too many pancakes which end up being left over. Here’s a recipe that yields enough pancakes for two people or one very hungry person! You can adjust this recipe by multiplying the ingredients according to the  number of people.

Ingredients:

  • 1/2 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tbsp butter, melted
  • 1/2 large egg (just scramble it and eyeball half)
  • 1/2 tbsp vegetable oil for greasing the pan

Mix together the flour, sugar, baking powder, and salt and set aside.

Now mix mix the milk, butter and egg.

Pour the wet ingredients into the dry ingredients.

Now mix the batter with a spoon. Don’t over mix the batter!! You want it to be a little lumpy. This is the trick for fluffy pancakes.

Set your stove on medium high, then wait for the pan to heat up.

Using a paper napkin, grease your pan by dipping the napkin in the vegetable oil.

Now measure out a quarter cup of batter, this is the perfect portion.

Pour your batter into the pan.

Wait until the pancake forms bubbles on the surface.

Now flip the pancake, press lightly on the pancake. When its done it spring back up. This side will only take about 30 seconds to cook.

Serve your pancakes with butter and syrup.
